Winter White Chicken Chili


Winter White Chicken Chili

Serves/Makes: 12       

Ingredients:
1 1/2 pound navy beans, soaked
1 1/2 medium onion, chopped
4 1/2 cloves minced garlic
12 ounces chopped green chilies
3 teaspoons ground cumin
1 1/2 teaspoon oregano
2 1/4 teaspoons cayenne pepper ( I use 1 tsp.)
3/4 teaspoon salt
3 pounds boneless skinless chicken breast halves
21 ounces chicken broth
1 1/2 cup water

Directions:
Put beans in medium pan and cover with water. Bring to a boil; reduce heat and allow to simmer 20 minutes. Discard water.

Cut chicken into 1-inch pieces and brown if desired.

Put all ingredients in crock-pot. Stir to mix thoroughly. Cover. Cook on low 10-12 hours or high 5-6 hours.
